GRANITA
½ cup sugar
2 whole star anise
½ cup pink grapefruit juice
ROAST
Standing rib roast in the 5- to 6-pound range (you may have to visit a butcher for this cut, since supermarkets frequently don’t carry it)
Butcher’s twine (if your roast isn’t already tied)
